
This pasta recipe it’s very easy to make and so delicious!
INGREDIENTS

- 1 lb penne rigate (with lines) or other pasta
- 2 lb vine-ripened tomatoes
- 1/4 lb cooked ham (thinly sliced)
- 4 tbsp extra virgin olive oil
- fine sea salt
- 1 small onion
- fresh basil
Wash, peel and seed the tomatoes.

Cut the sliced ham into small pieces.

Bring a large pot of salted water to a boil. In a large (10 – 12-inch) skillet, heat 4 tbsp of olive oil. Add the julienned onion and cook until golden, about 3 minutes. Add the ham and cook over medium heat 2 – 3 minutes.

Add the tomatoes and 1 tsp of salt and continue to cook over medium heat for about 20 minutes.

Cook the pasta until al dente. Drain in a colander, then transfer the cooked pasta to the sauce skillet and toss over high heat for 3 – 4 minutes to combine and evenly coat the pasta with the sauce. Turn off the heat and add some chopped fresh basil.










Your post reminded me that there is nothing as yummy as when you marry pasta to tomato and basil.And crown it with freshly rasped pecorino(I prefer that one to parmesan).Once Italian chef here told me that the best pasta dish is spaghetti in buttersauce with fresh chopped parsley topped with parmesan.At first I laughed..till I tried it.Superb.
